【食譜】加厚加料版義大利烤餅 Biscotti

這兩天實驗室男人一直問他家女人累不累? 越問越詭異,"屈打成招"之下才說”大家”想要Biscotti ,他想要加厚跟加很多南瓜籽的!

實驗室男人很少開口主動要吃什麼,難得接受到指令,當然快快動手,加厚?沒問題!很多南瓜籽?這個Biscotti 只要黏的住核果不在意外型,當然沒問題,還外加了一堆葵花子。

Biscotti 是北方小鎮裡,一個教我做法國棍子麵包的媽媽一起教給我的。她說平時工作很忙,晚餐總是買超市裡的半成品來煮,麵包也是買現成的,法國麵包跟Biscotti都沒有油可以放久一點,偶爾她有空時就會多做一點,同一個麵團作許多小小變化,家人就可以享受不同口味。 我想不管她怎麼忙,家人一定能夠體會到她的關心。

偷偷跟你說, 我們家的Biscotti 不管裡面有加料沒加料,隔天一定整筐不知去向,一半是他解決的,一半進了實驗室其他人的肚子裡,他說實驗室裡停不下來吃飯時,沒有油的Biscotti 不會弄髒手,單吃脆脆的,學法國人沾咖啡沾奶茶也好吃。

有時候做成鹹味,沾蔬菜湯或海鮮湯他也是一臉幸福的吃完!

 

Biscotti 01

材料:

乾料: 中筋麵粉 280g,泡打粉 1小匙,鹽1/8小匙,糖75g(單烤果乾時)~90g(單烤核果時)

 濕料: 3個,有機檸檬or柳丁皮屑1大匙or柑橘精油10

拌料: 核果70~100g(:甜杏仁or南瓜子or松仁or 葵花籽)

果乾700~100g (:葡萄乾or蔓越莓乾) 

Biscotti 02做法: 

1.烤箱預熱至180 C / 350 F,把核果平鋪在烤盤上,烘烤約5~8分鐘或至顏色變黃且烤出香味,取出待涼。

2.混合所有乾料,過篩備用。

3. 蛋打散加入檸檬皮屑/精油拌勻,然後慢慢加入濕料

4.麵團分兩碗,分別加入核果及果乾切拌均勻至看不出粉粒(避免過度攪拌)。

5.工作台灑上一層乾麵粉防沾(雙手也是),把麵糰塑成圓球狀,整型成長條狀

6.烤盤鋪上烤盤紙,將麵糰移到烤紙上,放進烤箱烘烤約20分鐘

7.取出斜切成約1.5公分以內厚片(圖片是加厚版),把餅乾切面朝上,鋪在烤盤上,放回烤箱烤約8分鐘,取出翻面之後,再烤8分鐘即可。

    I spent an hour reading your articles about cooking and traveling.
    I heard from JH that you predicted I cook curry rice for him again. Ha, it is the easiest way for me to prepare dinner. By the way, JH washed the dishes for me on that day. From his behavior, I believe you can live happily in Korean. Another thing I have to tell you is JH had an unforgettable birthday party yesterday because he had to finish a big spureme sweet chocolate cake with a cup of water. Ha, Selina, you should not leave JH with me. I am torturing JH! Oh, he is leaving Gainesville soon. I have to think some new ideas to take care of JH for you.
